1. Apple-Peel Twigs
Ingredients: 12 pieces of organic apples, ½ teaspoon cinnamon, and 1/4 cup sugar.

Directions:
•   Toss peels from apples with cinnamon and sugar. Sprinkling peels with a few drops of water will help the substances stick together.
•   Spread in a single layer on 2 parchment-lined baking sheets. Bake in a preheated 250 °F oven until peels are curled and crisp. This will take about 2 hours 30 minutes. Rotate peels halfway through.
•   Allow to cool before serving.

2. Veggie-tasty Samosas
Ingredients: 2 cups finely diced sweet potato, ¼ cup frozen peas, 2 medium sized carrots, lemon juice, vegetable oil, 1 teaspoon garam masala, some Nigella seeds and 4 phyllo pastry sheets.

Directions:
•   Preheat the oven to 350 °F.
•   Use a skillet and dry-fry the vegetables for
5 minutes over medium heat until slightly softened.
•   Season with the garam masala,
and add some lemon juice.
•   Spray two sheets of the phyllo pastry with oil and then sandwich them together.
•   Cut the sandwiched sheets into three strips.
•   Blob a spoonful of the vegetable filling at
the bottom corner of each strip of pastry.
•   Fold the strips one after the other to create three perfectly formed samosas.
•   Repeat the process for the rest of the phyllo sheets.
•   Spray each samosa with a more oil and sprinkle with nigella seeds.
•   Put the samosas on a baking sheet and cook in the oven until lightly browned. This will take around 15–20 minutes. Serve warm or cold.

3. Pizza Crackers
Ingredients: 8 square whole-wheat crackers, 1 tablespoon thawed frozen chopped broccoli, 3 tablespoon shredded part-skim mozzarella cheese, and 3 tablespoon jarred marinara.

Directions:
•   Preheat oven toaster or broiler.
•   Put 8 square whole-wheat crackers on a broiler proof (or toaster-oven) baking sheet.
•   Divide evenly, top crackers with 3 tablespoons shredded part-skim mozzarella cheese and 3 tablespoons jarred marinara sauce.
•   Put 1 tablespoon thawed frozen chopped broccoli on the top half of the crackers.
