Peruvian cuisine is widely acknowledged to be one of the best across the globe. It is gaining popularity in the world of food and several fine dining restaurants have started to specialize in it.

However, all guests that stay in Lima luxury hotels agree that the best Peruvian food is found right here in Peru. Over the years, the country has been exposed to, and influenced by several different cultures. It has been home to the great Incan empire and it has seen Spanish conquest and settlement. People from Asia, Africa and Europe have settled here, bringing a piece of their culture along with them. All these factors have influenced Peruvian food as well.

Ceviche

This is, perhaps, the most famous of all Peruvian dishes. It is primarily made-up of locally sourced seafood that is marinated with lime or lemon juice, garlic, hot peppers and onions. The dish is served with potatoes, sweet potatoes, maize or yuca. Ceviche can be made from different types of sea food, including scallops, calamari, white sea bass, shrimp, etc. Any kind of delicate sea food is generally acceptable. This dish is immensely popular at the best restaurants in Lima luxury hotels.

Tiradito

As mentioned earlier, there are several different influences on Peruvian food. Tiradito has a very clear Japanese influence. It contains long, thin slices of fish that’s marinated in lime or lemon juice, along with yellow chilies and spices. It is served with a garnish of corn.

Escabeche de Pescado

This dish contains carefully sautéed fish that’s topped with onions, garlic, black olives, hot peppers and cumin. It can be served with a boiled egg on the side.

Chupe de Camarones

Made from locally sourced crayfish, this is one of the more popular dishes in the restaurants of Lima luxury hotels. The thick soup contains the crayfish along with milk, yellow chilies, potatoes and eggs. It’s usually accompanied by caramelized onions and the South American favorite-corn.

Aji de Gallina

This is a very famous dish and amongst the variety of seafood based dishes, it stands out. It is made by slow cooking chicken so that the meat can be pulled. That is added into a cream of yellow peppers, hot peppers and cheese. It’s generally served with hard boiled eggs, boiled potatoes and rice. This dish is served in several restaurants in and around Lima luxury hotels.

As you can see, the fare is varied in cooking style and ingredients and is a delight for the taste buds.
