Every kitchen owner has cutting, chopping, dicing, and slicing needs. If you wonder whether your collection of chopping and cutting boards is doing their job in the healthiest, most efficient way possible, it is best to consider the different types and materials that are most appropriate for different types of food that you slice and dice.

There are conflicting views online about which type of material for a cutting board is most sanitary, the least damaging to knives, and the most eco-friendly. To help you weigh your options, here is a rundown of common cutting and chopping board materials you will typically see in the market today:

•    Plastic – Most contemporary cutting boards are made out of plastic. However, even though plastic appears to be the most sanitary choice because it can easily slip into the dishwasher or cleaned manually, there are studies showing that more bacteria can be recovered from used plastic cutting surfaces than from used wood surfaces. One study from the University of Michigan also found that while plastic boards can be disinfected, blade-scarred surfaces can be difficult and sometimes impossible to clean and manually disinfect, making them health hazards in the long run as bacteria, not visible to the naked eye, start to collect in them.

•    Bamboo – Bamboo is an increasingly popular choice, particularly for environmentalists. A sustainable hard grass, bamboo doesn't need any chemicals to grow, thrive, and be harvested. They are preferred by many because they tend to absorb less liquid than their wooden counterparts. However, they are also a lot harder than traditional maple wood cutting boards, making them harsher on knives in the long run. When choosing bamboo boards, make sure that the piece you buy use formaldehyde-free adhesives to protect yourself from unnecessary chemicals that may get into the food you eat.

•    Wood – Perhaps the most popular choice, wooden boards are kinder to knives, are self-healing, and have natural properties that help disinfect your chopping and cutting surface organically. They are, however, prone to warping and cracking, especially when exposed to water and liquid substances, which means they require frequent replacement. Food-grade mineral oil can be used to prolong a wooden board's life and prevent it from warping or staining.

•    Glass – Tempered glass cutting boards are also becoming quite popular because they clean up nicely and go well with contemporary kitchens (aesthetically speaking). They, on the other hand, dull knives quickly and can very easily become slippery.
